One of the biggest trends in food right now is making comfort food fancy. Think back to childhood, and your favorite dishes probably included grilled cheese sandwiches, macaroni and cheese, tacos and pizza. It’s stuff the average adult probably doesn’t indulge in on a regular basis — but wouldn’t you love to enjoy those meals with a twist? Chefs across the country are doing just that, using locally sourced ingredients to please even the most discerning palate.

The Best Grilled Cheese in the Galaxy

Just outside the nation’s capital is Spacebar. The Falls Church, Virginia, establishment serves exactly three things: grilled cheese sandwiches, tater tots and craft brews. But it’s the variety of 20 specialty sandwiches — which includes a build-your-own grilled cheese option — that keeps diners coming back.

Adult-friendly chef creations include apples with gouda and Havarti on multigrain, garlicky sautéed spinach with feta and mozzarella on sourdough, and pulled barbecue pork with crispy fried shallots and sharp cheddar on rye. With the most expensive sandwich on the menu at just $11, you’d be hard pressed to find a more wallet-friendly option in the DC Metro.

Spicing up Traditional Mac & Cheese

In recent years, Austin has become a destination for foodies, and Texas chefs are answering the call with Tex-Mex inspired dishes. One unique combination comes from The Roaring Fork, which has three locations in the city. Featured on The Food Network’s “Guilty Pleasures,” the restaurant’s Green Chili Mac & Cheese spices things up —way up.

Baked in a miniature cast-iron skillet, the dish features elbow macaroni, pepper jack cheese, roasted poblano peppers, caramelized onions and panko breadcrumbs. The intense flavor combination is a far cry from the Kraft Mac & Cheese you ate as a kid.

Let’s Talk About Tacos

Sometimes, the best food is prepared on wheels, and Garbo’s Grill in Key West, Florida, is no exception. Parked on Caroline Street, husband-and-wife team Eli and Kenna Pancamo cook up a small menu of gourmet creations in a 6-foot by 8-foot food cart. In a town of tasty eats, the couple stands out with their unique take on tacos, which includes Korean BBQ, Yum Yum Shrimp and Cayo Fish. Fresh ingredients and a bit of spice make these tacos the best in the Keys!

Gourmet Pizza in Your Own Backyard

While road trips are fun, there’s no need to travel to get a taste of gourmet pizza. Bricco has taken the basic cheese, dough and sauce combination you loved as a kid and added our own Tuscan and Mediterranean-inspired flair. Our pizza menu has something for everyone with a rotating pizza of the day and a handful of other tried-and-true favorites. Try our classic Margherita with San Marzano, basil, fior di latte and extra virgin olive oil or a pie featuring local chicken, baby spinach and a crème fraiche sauce.

Don’t forget that all our pizzas are half price weekdays during Happy Hour! We’ll see you soon.
