Bricco’s Specialty Pies Reimagine Pizza Night

If your idea of pizza involves preheating the oven and pulling a cardboard box from your freezer or texting an emoji to your local delivery joint, you’re in for a rude awakening. Sure, both options are technically “pizza” in that they have crust, sauce and cheese. But you haven’t tasted a real, authentic Italian pizza pie until you’ve had a piping hot slice with a crispy crust, zesty tomato sauce and gooey cheese straight from our wood-fired oven.

At Bricco, we pride ourselves on reimagining the ordinary to make it something extraordinary. Our dinner menu features homemade pasta, grass-fed beef and locally sourced vegetables. The standards for our pizza menu shouldn’t be any different. And they aren’t!

 

Step 1: Crust

Everyone knows good pizza starts with a solid foundation. And that means a great crust. You want something that has a bit of a crunch without being too thin. And you want something that’s thick enough to support the mound of toppings without feeling like you’re eating an entire loaf of bread with every bite.

The key to striking that perfect balance starts with fresh, local ingredients. Our hand-tossed dough is gently pulled into perfectly round circles and brushed with olive oil before being put into our wood-fired oven. The crust is almost good enough to eat on its own, but, luckily, you don’t have to! And, for those with gluten sensitivity, our crust can be made gluten-free upon request!

Step 2: Sauce

If there’s one thing a restaurant serving Tuscan and Mediterranean-inspired dishes should be able to do well, it’s sauce. Any good Italian will tell you their family’s sauce is the best. Nevertheless, we have to politely agree to disagree, as we know our sauce is actually the best! We use local tomatoes and the perfect blend of herbs and spices to make sure of it.

When we pour our sauce over the dough, there are big chunks of tomato, diced onion, bits of garlic and flakes of oregano. It’s basically canned tomato sauce on steroids, and it’s delicious.

Step 3: Cheese

In Wheeling, West Virginia, uncooked, shredded provolone is the cheese of choice. In Old Forge, Pennsylvania, you’ll find trays of pizza with American Cheese on top. At Bricco, we know that cheese is pretty much the icing on the cake for pizza lovers. And, like with icing, there’s a lot of good flavors, so we mix it up when it comes to our cheese
choices.

There’s truly something for everyone on our pizza menu! You’ll find Fior di latte (also known as fresh mozzarella), Parmesan, aged provolone and ricotta. And that’s not even counting our rotating Pizza of the Day!

Step 4: Toppings

At Bricco, our cheese selection is only surpassed by the sheer number of toppings we offer! Our chefs put together some truly mouthwatering flavor combinations including Kennett Square Mushrooms, Fior di latte, Caramelized Onions & Truffle Oil and Rettland Farm Pastured Chicken, Baby Spinach, Parmesan & Crème Fraîche Sauce.

But we also offer standby favorites such as Margherita and Pepperoni. Just don’t expect ho-hum flavor. We take pride in sourcing our toppings from local farms whenever possible, and it’s a freshness you can taste!
