About Our Seasonal Ingredients
From a crisp garden salad in the summer to a creamy bowl of butternut squash soup in the fall, our specials always match the season. At the first sign of spring onions each March, we start including them in our seasonal dishes. Our Harrisburg restaurant even incorporates seasonal fruits into our extensive cocktail menu.
We also incorporate our seasonal ingredients into our chef’s signature menu items whenever possible. When given the choice between purchasing meat, poultry, or produce from a national supplier or a farmer down the road, Bricco always chooses to support our neighbors. We believe our dishes taste better when the ingredients spend less time on a truck or in a freezer.
Why a Sustainable Restaurant?
Sustainability is a buzzword that continues to be thrown around in restaurants of every shape and size. What exactly does it mean? From implementing eco-friendly practices to supporting local farms, a truly sustainable restaurant seeks to preserve the environment and enhance the lives of those in our community. Our goals here at Bricco are simple — showcase delicious and sustainable ingredients, support local growers, and adopt practices that keep our region clean and beautiful.
There are three distinct aspects to maintaining a truly sustainable restaurant:
- Environmentally friendly practices
- Waste reduction
- Supporting local growers
As our planet’s natural resources decline, it’s more important than ever for the restaurant industry to be transparent and implement sustainable practices. This will ensure our diners get all the benefits of healthy eating while at the same time revitalizing the local community we serve.
Sustainability all begins with the types of food products we purchase and serve to our customers. By sourcing ingredients that are local, organic and healthy, we reduce our environmental footprint and build and strengthen positive relationships with nearby growers. Partnering with farms that practice sustainable agriculture encourages other businesses and growers to choose sustainability.
Central Pennsylvania enjoys a long agricultural tradition. By procuring organic food from local farms and producers, we ensure generations to come will enjoy thriving farms and an abundance of natural resources. We are proud that our local-focused approach contributes to the success and well-being of businesses throughout the region.
